One year food preparation experience in fine dining restaurant and/or catering setting, two years experience in fine dining preferred.
We are looking for someone who can:
?Assist the Executive Chef and Sous Chef with food production for Waterleaf Restaurant ala carte menu, room service menu and catered events.
?Prepare ingredients for recipes including clean, peel, core, butcher, filet, portion and weigh.
?Make dressings, sauces, stocks, gelatins, vinaigrettes, broth, ragouts, emulsions, etc.
?Make simple, classical or special salads.
?Prepare meats, poultry, seafood, starches, legumes and vegetables for cooking as required.
?Make desserts and limited baked goods as needed.
?Create and prepare garnishes.
?Plate food and desserts for restaurant and catered events.
?Perform all safety and sanitation procedures in performance of duties.
?Give daily menu input to Chefs as needed.
?Perform other appropriate job duties as assigned by the Executive Chef.
